I want healthy dinners with minimal cleanup. One pot, one pan, whatever. Just as few dishes as possible. Bonus if it's high protein. Share your best!
One-pot chicken and rice:
Chicken thighs, rice, broth, whatever vegetables you have. Season with garlic, paprika, salt. Everything goes in one pot. 30 min. ~45g protein per serving.
My kids love it too which is the real miracle.
Red lentil curry: 1 can coconut milk + 1 cup red lentils + can of diced tomatoes + curry powder + spinach. 20 minutes one pot. Insane flavor for zero effort.
Sheet pan sausage and veggies. Italian sausage, bell peppers, onions, potatoes. Cut everything up, toss with olive oil and seasoning, 400F for 25 min. One pan. Chef's kiss.
Slow cooker chili: brown ground turkey, dump everything in the slow cooker, forget about it for 6 hours. Makes like 8 servings. Freeze half for next week.
Stir fry. One wok. Protein + veggies + sauce + rice on the side. 15 minutes. Infinite variations. This is like 3-4 of my weekly dinners.
One pot Mediterranean chicken: chicken breast + canned artichokes + olives + sun dried tomatoes + chicken broth. Simmer 20 min. Serve over orzo cooked in the same pot.
Made the one-pot chicken and rice tonight. Took 30 min and one pot to wash. This is the kind of cooking I can actually sustain. Thank you!
One pot enchilada quinoa: quinoa + black beans + enchilada sauce + corn + cheese on top. 25 minutes. Vegetarian and the macros are great.
